A juice boost was my solution to a poorly start to the new year. I needed to get more fresh fruit and veg into my system, and a hit of vitamins and minerals.
I juiced in the morning for breakfast, in the evening for dinner, with a salad at lunch time, dressed with lemon juice. The salad contained leaves and veg only, with some sprouted seeds. I opted for a vegetarian salad to ease the pressure on my digestive system.
You would think I would be starving all the time, but actually I didn’t feel as hungry as I thought I would. The juices were filling, and having a salad helped too because it was something solid and fibrous. I did need a snack in the evenings so opted for soaked/activated almonds.
My skin glowed and I felt much lighter at the end of the 2 days. It felt like the ‘swelling’ in my body had gone down. I can’t describe what I mean by that accurately, but I felt less puffy.
I am planning of having a juice day like this every week.
Juice ingredients, chosen because I like the taste of them more than anything else and I opted for more veg than fruit to keep sugar levels low:
- 1 x apple
- 2 x celery stalks
- 2 x carrots
- 1 inch ginger
- 1 x lemon OR grapefruit (not sure I would have grapefruit in a juice again)
- 1 x large beetroot OR 2 x small beetroot (I missed adding this to my first juice and loved the flavour it added)
